Overnight Refrigerator Oatmeal, with cherries and sliced almonds. No-cook, and chilled: perfect for a hot summer morning, without heating up the kitchen.
The summer days here in SE Montana, at the moment, are long and hot, and the last thing I get excited about is heating up the kitchen first order of the day. But, my family still wants something to put in their bottomless-pit stomachs to break the long fast from dinner so many hours before…..poor things! And, well, I must admit, I’m not one of those “I can’t eat breakfast” types, so I’ll welcome anything that will satisfy both a rumbling stomach and my wish to keep the house cool for as long as possible.
And, right now, I have twenty pounds of just wickedly-delicious Flathead cherries in my fridge that are begging for an appearance at every meal. I would really like to accommodate the beauties! Can you blame me?
Enter, Overnight Refrigerator Oatmeal, which will remedy both of my problems. An easy-easy, throw-together-the-night-before, hearty cereal with no end to the flavor combinations, add-ins, or fruit you wish to put on top. (In this case, the wickedly-delicious Flathead cherries of the most succulent, juicy variety!) I just mix ours up in a large bowl, but if you wanted a more grab-n-go versions, divide this recipe by four and mix it up in four pint Mason jars, or in any container you like, for a fun and personal touch.
But, we tend to personalize right in our bowls, and we aren’t running off to town jobs, so this works just dandy for my family.
I don’t think it’s missing anything by not personalizing, do you?
The idea of cold oatmeal just didn’t sit right with me at first, but after trying this, I’m hooked! This is NOT your it-all-clings-to-the-spoon-in-one-blechy-lump oatmeal, folks! Oh, no! Even my working-man hubby has wholeheartedly added his approval…..as long as there’s some leftover in the frig for snacking on later. And, yes, it’s good then too—much like a cool, creamy rice-puddingy kind of treat. It’s delicious! And, I’m sure you will agree once you try this stuff!
- 2 cups old-fashioned rolled oats
- 2 tablespoons chia seeds
- 2 tablespoons flax seed meal
- 2 -2/3 cups almond milk (or milk of choice)
- 1/4 cup honey (or brown sugar, or maple syrup)
- 1 cup Greek yogurt
- 1 tsp almond extract
- 1 tsp vanilla extract
- 2 cups chopped red cherries
- Sliced almonds
- In large bowl, mix together: oats, chia seeds, flax seed meal, milk, honey, extracts and Greek yogurt.
- Cover and refrigerate overnight.
- In the morning add fruit, more yogurt, more milk or cream as desired.
- Top with almonds.
- To make single serving jars, divide recipe among four pint Mason jars, but follow same procedure.
Now, go on! Make some, you’ll be glad you did!
